C’est une rillette sur la viande confite et très faible en gras (10% de matière grasse) et en sel (Environ 12g/kg).  Tout l’art du dosage est d’arriver à garder du moelleux tout en ayant beaucoup de viande. Allez-y avec des huitres et la vie sera belle.
